Recipes from Aquitaine Fraance!!!!!!?

Im doing a project for my french cl and i need a recipe from aquitaine france and i need to include a recipe from that exact region. i have something called gratin de poires au Sauternes but i dont have the recipe. if anyone has it that woul be great to share! thanks!!
